Fate rassodare le uova in acqua bollente. Sgusciate e tagliatele a metà.
Pulite i carciofi eliminando le foglie più dure ed il gambo. Tagliateli in 4 ed eliminate la barbetta.
A questo punto saltateli in padella con olio ed uno spicchio di aglio.
Aggiungete mezzo bicchiere di acqua e Fate cuocere a fuoco medio finche non saranno morbidi.
Mettete gli spicchi di carciofi in un boccale, assieme alla mayonese ed il tonno.
Aggiungete i tuorli delle uova sode e frullate fino ad ottenere una crema.
Mettete la crema di tonno in una sac-a-poche con un beccuccio a stella e riempite l’alvo dell’albume sodo.
Decorate con menta fresca.
