· 400 g di pasta corta
· 300 g di pomodorini colorati
· Un mazzetto di menta fresca
· Erba cipollina qb
· sale e pepe qb
· 1 vaso di sgombro sott’olio l’ISOLA D’ORO
· 1 patata media
· Olio evo qb
· La zeste di un limone
Fai cuocere in acqua salata la pasta e scolala al dente. Lavala con acqua fredda e condisci con olio evo.
Lava i pomodorini, condisci con olio sale e pepe e falli appassire in forno per circa 20 minuti.
Taglia la patata a cubetti, e falli cuocere in forno con un filo di olio, finche saranno dorati e croccanti.
A questo punto assembla tutto assieme alla pasta ed aggiungi i filetti di sgombro L’ISOLA D’ORO
L’olio dello sgombro usalo per condire l’insalata di pasta. Trita della mentuccia, grattugia la zeste di un limone ed insaporisci il tutto e buon appetito.
