Lavare e asciugare i pomodorini e l’insalata, sgusciare le noci, sbucciare e affettare a spicchi l’arancia.
Tagliare a metà i pomodorini e successivamente condire a parte l’insalata mista con olio, sale e pepe.
Comporre il piatto disponendo centralmente o a lato una striscia di insalata e guarnirla con pomodorini, olive nere, spicchi di arancia, noci, origano ed infine adagiare i filetti di sgombro grigliati all’olio di oliva Isola d’Oro.
Terminare l’insalata con yogurt intero sullo sgombro e qualche punto di senape a lato.
